The Superfood They Are Trying to Engineer Out of Existence

There is a moment, familiar to anyone paying attention to the food industry over the past decade, where a product arrives with a sleek sustainability story, a promise of identical taste, and the quiet backing of a corporate giant. Lab-grown meat had its moment. Now it is chocolate’s turn.

In April 2026, an Israeli biotech startup produced the world’s first bars of chocolate made entirely without cacao trees. The cocoa butter at their heart was grown in a steel bioreactor, fed on sugars and nutrients, cultured from cells taken from a single bean. Twelve bars were manufactured at a well-known UK chocolate factory. The industry called it a breakthrough. The question worth asking is: a breakthrough toward what, exactly?

When Chocolate Stops Being Chocolate

Real chocolate has a definition. In most of the world, that definition is protected. It requires actual cacao, grown, fermented, and roasted in ways that have developed over thousands of years of human relationship with the plant.

Cadbury’s Dairy Milk, one of the most recognisable chocolate bars in the world, cannot legally be called “chocolate” in 27 countries because it already contains so little of the real thing. The cocoa butter has been replaced with what the industry calls vegetable fat, a blend of industrial oils chosen for their cost and shelf stability rather than their nutritional value. What remains is diluted further with additives, then flavoured with synthetic vanilla to mask the taste of what has been lost.

This is not a future concern. This is what is already on the shelves. Lab-grown cocoa butter is simply the next step in the same direction: replacing a living, complex, biologically rich substance with something cheaper, more controllable, and far more profitable.

What Real Cacao Actually Does

The case for defending genuine chocolate is not sentimental. It is biological.

Traditional dark chocolate is a superfood in the truest sense of that overused word. Its benefits do not come from the fat alone. They emerge from a complex interplay of compounds that only develop through natural fermentation and roasting of the cacao bean:

  • Fermentation by wild microbes breaks down proteins into bioactive peptides with documented antioxidant, anti-inflammatory, and blood-pressure-lowering effects.
  • Flavanols and polyphenols in tree-grown cacao are linked in major studies to improved cardiovascular health, better blood flow, and sharper cognition.
  • Research into high-flavanol cacao has found it can reduce the risk of heart-related mortality by up to 27 per cent.

Cell culture in a sterile bioreactor bypasses fermentation entirely. That means the bioactive peptides, the microbial-derived compounds, the secondary metabolites that emerge only when real beans interact with nature’s microbiome: none of them form. The industry’s own language is careful here. Lab-grown cocoa butter is described as “biologically identical” in its fat profile. It is not claimed to be identical in the full complexity of what fermented, tree-grown cacao provides.

The distinction matters enormously, and it is not being communicated to consumers.

The UPF Problem Nobody Wants to Name

Lab-grown chocolate is, by any reasonable definition, an ultra-processed food. It does not exist in nature. It is produced through industrial processes involving growth media, chemical inputs, and proprietary formulas that no kitchen or traditional food producer could replicate.

The evidence on ultra-processed foods has become increasingly difficult to ignore. Multiple large-scale studies and documentary investigations have consistently found associations between high UPF consumption and elevated risks of obesity, cardiovascular disease, metabolic disruption, depression, and early mortality. The mechanisms are not fully understood, but the pattern is consistent: the further food moves from its natural state, the more the body tends to struggle with it.

Long-term safety data for cell-cultured food products does not yet exist, because these products have not existed long enough to generate it. Experts in plant cell culture have raised concerns about unintended metabolites from the growth media, novel allergens, and subtle shifts in how the body processes engineered compounds. We heard the same reassurances about vaping. The phrase “identical to the natural product” appeared there too, until the long-term data began to tell a different story.

Who This Actually Serves

The sustainability argument for lab-grown chocolate is not entirely without foundation. Cacao farming does carry real environmental costs. Child labour in West African growing regions is a genuine and serious issue. Climate change is disrupting supply. Prices have risen dramatically since 2022.

But the global cocoa price, which fluctuated around $2,000 per metric tonne for decades, has now stabilised at around $5,000, having peaked above $10,000 in late 2024. The economic pressure on the industry is real. And that pressure is precisely what makes lab-grown cacao attractive to the corporations funding its development.

The companies backing this technology are not small ethical startups. The Israeli biotech behind the first bars is funded by Mondelez, the conglomerate that owns Cadbury, Oreo, and Toblerone. The playbook is familiar: frame a corporate cost-reduction strategy as an environmental imperative, patent the production process, control the supply chain, and gradually sideline the millions of small-scale farmers in West Africa and South America who currently grow the real thing.

Real cacao becomes obsolete. Consumers become dependent on steel tanks and proprietary formulas. Food centralisation is dressed up as sustainability.

An ethically sourced, third-party tested bar of high-flavanol dark chocolate, bought from a producer who respects both the land and the people growing on it, already addresses the legitimate concerns about the industry. That option exists now, and it does not require handing control of the food supply to a handful of biotech patent holders.

The Choice You May Not Be Offered

There is one further dimension to this that deserves naming directly. The question is not just whether lab-grown chocolate is as healthy as the real thing. The question is whether you will be told when you are eating it.

Labelling requirements for novel foods in the UK have weakened, not strengthened, in recent years. The Genetic Technology Act now permits gene-edited ingredients in England without mandatory labelling or safety assessments. If lab-grown cocoa butter enters the supply chain as an ingredient rather than a named product, the bar you pick up may contain it without any indication on the wrapper.

The most powerful response available is the one that does not require legislation: know what you are buying, read what is in it, and where possible, choose producers whose entire process you can trace and trust.

Real chocolate, grown on a tree, fermented by microbes, roasted with care, and consumed in its genuinely complex natural form, is one of the oldest and most potent plant medicines humanity has ever eaten. That is worth protecting.
